What is 1/8 Order of Beef?

The 1/8 cut is considered Butcher's Choice. It would be a whole divided between 8 customers or 1/2 divided between 4 customers.


We grow our on corn, harvesting it ourselves as the whole ear to include cob and husk.

What is 1/4 order of Beef?

On a 1/4 cut the Butcher takes 2 orders that are similar, divides out each section of that half then custom cuts each order so each customer gets an equal amount.


We use locally grown peanut hay.

What is 1/2 order of Beef?

A half order is simply 1 side of the animal. Custom cut and wrapped to your specifications.

Yield of a whole steer?

A steer weighing 1,000 pounds on the hoof will average around 430 pounds of retail cuts (steaks, roasts, ground beef, stew beef, etc.).
